About the Course

This English language course covers the science and sociology of insects as food and feed. Increasing media, investment, and public policy attention has been given over the years to the role insects may play in the future of food. Can eating insects really save the world from famine and environmental destruction? Are there health costs or benefits to adding insects to the diet? Will all people accept insects as food? Can we feed them to livestock? Should we be promoting edible insects at all, and if so, how best do we do it? What species will we eat and how shall we raise them? This class examines all aspects of the edible insects question, with students taught a broad but thorough overview of the field and asked to consider questions in class about what role they think insects will play in their own food futures, and why they think this way....

Great introduction to a wide variety of perspectives in Edible Insects. It was great that it covered practical information such as farming techniques and types of insect, but also covered important contextual items such as social, cultural, and philosophical issues and viewpoints.

Very informative course on edible insects and insects as a whole with a great overview on the different ways to eat, prepare and produce insects for food. A follow up and technical course on production following this would be great.

As a curious person about sustainability and circular economy I was greatly educated about the use of insects in the solving of the problems facing humanity today!. The course is very well designed, with some humoristic notes from the professor and can well be the base to start you thinking ahead and why not prepare to take advantage of insects in an entrepreneurial initiative. TOP!

Material for the class was well organized. Presentations were interesting. However, the peer reviewed assignment was a waste of time. When it came to reviewing other students' assignments, it appeared that many students graded others unfairly. I don't know if they were just being mean or they did not understand the grading rubric. I will try to avoid Coursera courses that have peer reviewed assignments from now on.
